Can you believe it is already March? I have been out of town so much, that I am not prepared to write this menu plan Monday post. But, I have put off the Minute Rice review and my Menu plan long enough. So, for Tackle it Tuesday, I am knocking out 2 birds with one stone.
Monday: Pork Tenderloin and Ranch Mashed Potatoes
Tuesday: Italian Meatloaf and Broccoli Casserole (if I can find a good recipe).
Wednesday: Tex-Mex Bake (new! From Minute Rice cookbook)
Thursday: Leftovers
Friday: Out To Eat
I have been loving my package from Minute Rice! The other day, I took one boneless, skinless chicken tenderloin. I cut it into bite sized pieces and stir-fried it. Then, I added a bit of teriyaki sauce. In the meantime, I took a cup of MINUTE Ready to Serve Yellow Rice Mix and cooked it in the microwave. I mixed the two together and had a great (and super quick) lunch! YUM!

It’s only my husband and I and he’s a SUPER picky eater, so I end up having to make two meals all the time. Frustrating!

The hardest thing about dinner for me is not trying to make it, surprisingly, but having a spare second to eat it. With a baby daughter getting into everything, it is a battle.
The hardest thing about dinner time for me is my husband’s work schedule. He’s on swing shift so sometimes we have dinner for lunch

The tough thing about dinner is that it either needs to be made before we leave for practices or after we get home. So, I have to make it at 4:00 or 8:00, one way to early for dinner and the other way to late to start making dinner.
the hardest thing for me is getting a wholesome dinner put together in time to eat it I need faster meals to cook.

The hardest thing about dinner is that we have to eat so late if we’re going to all eat together (which is very important to me). My son has karate classes in the 5-6:30 hours 4 times a week, and my daughter has swim practice from 6-7:30 each night. So we’re always eating just before 8pm!

I hope this giveaway is still going on – I can’t find an ending date – anyways the hardest part for me at dinner time is I have no patience for waiting for items to cook! I want everything prepared and cooked right away!
