Kid-Friendly Recipes: Main Dish, Side, and Dessert!

I told you Cyndy would be with us for a few weeks.  This is her final post!  You all have loved her great writings, please be sure to show her some love this time, too! ~Kelli

These Kid-Friendly recipes are ones that I served my children while they were growing up. They still ask for this Kid-Friendly recipes meal on a regular basis as do my grandchildren. You might want to double all three recipes as you’ll be asked for more!

Kid-Friendly Recipes: French Drip Beef

Serves 8

  • 1 rump or trimmed chuck roast (2-3 lbs.)
  • 1 T. cracked pepper
  • 1 T. salt
  • 1 T. Rosemary
  • 1 T. Summer Savory
  • 1 T. Oregano
  • 1 Bay Leaf
  • 1 Beef Bouillon Cube
  • 1 tsp. garlic powder
  1. Place roast in large cooker and add enough water to barely cover meat.
  2. Add seasonings.
  3. Cover and cook on low heat for 8 – 10 hours. Do not add more water unless necessary.
  4. Before serving, remove roast from pan and shred meat with 2 forks. Serve on buns. Better when prepared ahead. Freezes well.

Kid-Friendly Recipes: Dilly Pickle Potato Salad

Serves 8

  • 3 lbs. Small red new potatoes, cooked, peeled and cut into bite-sized pieces
  • 1 bunch green onions, chopped
  • 1 small jar sweet pickles, chopped
  • 1 1/3 c. light mayonnaise (not Miracle Whip)
  • 1/3 c. half & half
  • 2 T. lemon juice
  • 2 T. dried dill weed
  1. Salt & Pepper to taste
  2. Toss gently and chill for 2 – 3 hours.

Kid-Friendly Recipes: Chocolate Brownie Pie

Serves 6

Preheat oven to 300 degrees

  • 4 eggs, well beaten
  • 2 cups sugar
  • 1/2 cup unsifted flour
  • 1/2 cup unsweetened cocoa
  • 1/4 tsp. salt
  • 1 cup melted butter
  • 1 cup chopped pecans (optional)
  • 2 tsp. vanilla
  • Cool Whip
  1. Beat eggs, sugar, flour, cocoa and salt together until well blended.
  2. Mix in melted butter, pecans and vanilla
  3. Pour mixture into a 9x9x2-inch baking dish.
  4. Set dish in a larger pan, and pour boiling water into the bottom of the pan to measure 1 inch.
  5. Bake 45 minutes to one hour at 325 degrees until set like custard and crusty on top. Serve warm with lots of Cool Whip.

    Mercy. You hit the nail on the head with me. Potato Salad and Brownies in the same meal. Heaven. That French Drip is the perfect thing to go with it. MMMMMMMMMM
