We keep moving these recipes from week to week. Life has been really crazy around here and lots of these things have made enough for more than one meal. It has been fun to cook something new each time I cook, though. LOL! Although, my kids are ready for some of mom’s “normal” cooking. :-)
Monday – Sweet & Spicy Prok Tenderloin
Tuesday – Easy Chinese Stir-Fry
Wednesday – Slow-Cooker Beef & Veggie Soup
Thursday – Beef Noodle Bowl
Friday – Egg Rolls

Menu Plan Monday

Well, we all had the bug last week so I only made two of our dinners. I have posted one of the recipes online and hope to get the other posted soon. We liked both! Anyway, this week you will see the other ones listed.

Monday: Zesty Stir Fry Chicken
Tuesday: Easy Italian Meatloaf
Wednesday: Taco Bake
Thursday: Sweet & Spicy Pork Tenderloin
Friday: Slow-Cooker Beef & Veggie Soup

One-Pot Roasted Pork Supper

Well, supper was FANTASTIC! I am definately adding this one to the recipe box for use in the future.
5 large new potatoes
1 large onion chopped into wedges
1/2 cup Light Catalina Dressing
1 1/2 teaspoon thyme
1 pkg Stove Top Stuffing Mix for Chicken
1 1/2 cups water
1 1/2 pound pork tenderloin
Salt & Pepper to tase

Preheat oven to 375. Toss potatoes & onions with salad dressing and 1/2 tsp of thyme. Arrange in 15x10x1 baking pan sprayed with cooking spray. Bake for 10 minutes.

Meanwhile, combine stuffing mix with water. Cut tenderloin into 2 inch pieces. Remove pan from oven and push veggies to the edges of pan. Spoon stuffing into center of pan; top with meat. Sprinkle remaining thyme over meat (I also lightly brushed with some of the dressing).

Bake for 50 minutes or until cooked through.

Thursday: East Italian Meatloaf

Friday: Slow cooker beef and veggie soup

All of the above are recipes we have never tried before. I have a list of 9 items that I want to try and have already bought ingredients for, so they will be made in the next few weeks. If we like them, they will be added to our fav recipes if not, they will be trashed.

Menu Plan Monday

I am really not sure why I am making this plan this week. We are going out of town bright and early on Friday morning, so I refused to get groceries this week. LOL! Consequently, it is going to be one of those “fly by the seat of our pants” weeks. I know tonights meal but other than that, it will be whatever I grab from the deep freeze.
Monday – Chili since we didn’t have it last week
Tuesday – My 10 year Anniversary and my husband has a baseball game… I am thinking stir-fry since he LOVES it, but we shall see
Wednesday – finishing up any left overs (my husband’s 34th birthday)
Thursday – we will be kidless so I am hoping we go out to eat
Friday – in Chicago… maybe we can find some nice places during this weekend.
