Four Layer Delight

To prepare: Preheat oven to 350.

My recipe that I bring to our family functions.

Ingredients
2 c self-rising flour
1 c pecans finely chopped
2 sticks melted margarine
8 oz cream cheese
1 c powdered sugar
8 oz pkg cool whip
1 ½ tsp vanilla extract
3 cups milk
1 lg pkg instant chocolate pudding

Directions
LAYER ONE: mix first 3 ingredients and pat into ungreased 9 x 13 in baking dish. Bake for 15 mins. Cool Completely
LAYER TWO: blend cream cheese, powdered sugar, 1 cup cool whip, 1 tsp vanilla and spread over cooled first layer.
LAYER THREE: mix pudding according to directions adding ½ tsp vanilla. Spread over layer two.
LAYER FOUR: Immediately before serving, spread remaining cool whip on top. I sometimes garnish with shaved chocolate bar, more chopped nuts, or mini chocolate chips.

Brown Rice using White Rice

My husband loves this!

Ingredients
1 ½ c uncooked white rice
1 can beef broth
1 c water
1 packet onion soup mix
1 beef bullion cube
1 tsp minced garlic
1 Tbs Worchestershire
¼ c melted butter

Directions
Preheat oven to 350

In 2 qt casserole dish combine all ingredients.

Bake covered for 1 hour, stirring once after 30 minutes

Boneless BBQ Pork Ribs

This is really good and not only works for ribs, but also pork chops and chicken.

Ingredients
Enough meat for your family. You know how many pieces you typically need for your family.
Bottle of Honey BBQ sauce

Directions
Preheat oven to 200

Arrange meat in one layer, in oven safe dish

Salt and pepper both sides

Pour BBQ over all

Cook for 3-4 hours, turn every hour

RECIPE: Crock Pot Pizza

A party favorite! Does better in an oblong crock pot as opposed to a tall one, but works well in both. If doing in a tall pot, make 4 layers instead of 2.

Crock Pot Pizza Ingredients
1 pkg thin spaghetti noodles
1 ½ lb ground beef
16 oz spaghetti sauce
20 oz pizza sauce
12 oz cheddar cheese
12 oz mozzerella cheese
1 small onion, chopped
1 small green bellpepper, chopped
1 large package pepperoni
1 can mushroom (optional)
Salt, pepper, garlic to taste

Crock Pot Pizza Directions
1. Cook and drain noodles
2. Brown and drain hamburger
3. Saute Onion and bellpepper
4. Combine with mushrooms and sauces
5. Layer (in this order) 1/2 noodles, 1/2 sauce mix, 1/2 cheese, and 1/2 pepperoni. Repeat.
6. Cook in crockpot at least 2 hours (on med heat) but not over 4 hours.

Note: may be put in 9×13 pan, in oven at 350, until cheese bubbles.

Jerk Chicken Nachos

To prepare: Preheat oven to 425.

My entire family loves this when we want a small amount of something fast. I hope you guys like it, too. I got the original from Pampered Chef, but changed it to better suit our taste buds.
Ingredients
6 cups tortilla chips
3 cups diced cooken chicken
2 cups (8 oz) shredded cheddar
2 tbs Jamaican Jerk Rub
¼ cup ranch dressing

Directions
1. Arrange tortilla chips in slightly over-lapping layer
2. Combine chicken, cheese, and jerk.
3. Sprinkle chicken mixture over chips.
4. Bake for 5 – 7 minutes or until cheese melts.
5. Pipe ranch over nachos.
6. ENJOY!
